I work at a different sushi bar/ teriyaki shop and yet Koibito is where I go. Need I say anything else?

Koibito is our favorite sushi restaurant in Olympia, hands down. We've had most everything on the menu, and they've always accomodated our "off the menu" requests. The bar is the best place to sit, the chefs always give you a little something extra. Service is excellent, and fish is almost always fresh out of the water. Choose the specials, always a good idea at any restaurant. Our favorite - the texas roll. And their sake (salmon) sashimi is one of our regular choices as well. Yum!!

Koibito has the best sushi I've found in the Olympia area. Before they opened, the choices around here were pretty sad.
I tried to go there at 3pm, but they said they were closed for their lunch til 4, so I came back then. I'm very glad I did! The service there was very nice, everyone was friendly. I had the tempura shrimp roll, which was excellent. I also had an unagi roll, which I'd never heard of in roll form before. It wasn't TOO bad, but the eel itself was a bit mushy. Finally I tried the garlic siro maguro which was quite tasty. I love garlic and albacore, so it made sense. The fish was nice and fresh, and the flavors really worked well together. Koibito is hands down the best in Olympia. Make a point to sit at the bar because they are hillarious. A great conversation and the freshest seafood in town.
